1. Heat 2 tablespoons of vegetable oil in a large pot over medium heat.
2. Add 1 onion and 2 cloves of garlic to the pot and sauté until softened.
3. Add 1 pound of leafy greens (such as spinach or kale) to the pot and stir well.
4. Add 1 cup of water to the pot and bring to a boil.
5. Reduce heat and simmer for 10 minutes or until the greens are tender.
6. Add salt and pepper to taste.
