HOW MUCH DO YOU LIVE JOLLOF RICE?

 



A classic West African dish! Here's a detailed recipe for Sweet Jollof Rice:


Ingredients:

- 1 cup uncooked long-grain rice

- 2 cups water

- 2 tablespoons vegetable oil

- 1 large onion, chopped

- 2 cloves garlic, minced

- 1 teaspoon grated ginger

- 1 cup tomato puree

- 1 cup beef or chicken broth

- 1 tablespoon tomato paste

- 1 teaspoon ground cumin

- 1 teaspoon paprika

- Salt and black pepper, to taste

- 2 tablespoons sugar (optional, for sweet Jollof Rice)

- 2 bay leaves

- 2 sprigs fresh thyme


Instructions.... let's go

1. Rinse the rice in a fine-mesh sieve until the water runs clear. Drain and set aside.

2. Heat the vegetable oil in a large pot over medium heat.

3. Add the chopped onion to the pot and cook until softened and translucent, about 5 minutes.

4. Add the minced garlic and grated ginger to the pot and cook for 1 minute, stirring constantly.

5. Add the tomato puree and paste to the pot. Stir well to combine.

6. Add the beef or chicken broth, ground cumin, paprika, salt, and black pepper to the pot. Stir well to combine.

7. If making sweet Jollof Rice, add the sugar to the pot and stir well to combine.

8. Add the bay leaves and sprigs of thyme to the pot.

9. Add the rinsed rice to the pot and stir well to combine with the tomato mixture.

10. Add the water to the pot and bring to a boil.

11. Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed.

12. Once the rice is cooked, fluff it with a fork to separate the grains.

13. Serve the Sweet Jollof Rice hot, garnished with chopped fresh herbs, if desired.


Tips:

- Use a non-stick pot to prevent the rice from sticking and burning.

- If using sugar, adjust the amount to your taste.

- For a spicy kick, add a diced Scotch bonnet pepper to the pot.

- To make Jollof Rice with meat or vegetables, add cooked meat or vegetables to the pot along with the rice.
