LET'S MAKE EGUSI WITH FUFU, YOU WILL LIKE IT




 


Ingredients:

For Egusi Soup:


- 1 cup egusi seeds

- 2 pounds beef or goat meat (or fish for a seafood option)

- 2 medium onions, chopped

- 3 medium tomatoes, chopped

- 2 Scotch bonnet peppers, chopped (optional)

- 2 cloves garlic, minced

- 1 teaspoon grated ginger

- 1 tablespoon ground crayfish (optional)

- 1 teaspoon salt

- 1/2 teaspoon black pepper

- 2 tablespoons vegetable oil

- 2 cups water

- 2 tablespoons palm oil (optional)

For Fufu:

- 2 cups cassava flour

- 1 cup water

Instructions on how to cook these 

Egusi Soup

1. Use a blender or food processor to grind the egusi seeds into a coarse powder.

2. Cut the beef or goat meat into bite-sized pieces. Season with salt and black pepper. 

3.Heat 1 tablespoon of vegetable oil in a large pot over medium heat. Add the meat and sear until browned on all sides. Remove the meat from the pot and set aside.

4. In the same pot, add another tablespoon of vegetable oil. Add the chopped onions and cook until they're softened and translucent.

5. Add the chopped tomatoes and Scotch bonnet peppers (if using) to the pot. Cook for 5 minutes, stirring occasionally.

6. Add the minced garlic and grated ginger to the pot. Cook for 1 minute, stirring constantly. 

7:Add the ground crayfish to the pot and stir well.

8. Add the ground egusi seeds to the pot and stir well.

9. Add the water and palm oil (if using) to the pot. Stir well to combine.

10. Add the seared meat back to the pot. Stir well to combine.

11. Bring the soup to a boil, then reduce the heat to low and simmer for 30 minutes, or until the meat is tender and the soup has thickened.


This is how to make a soft smooth fufu

1. In a large bowl, mix together the cassava flour and water. The mixture should form a sticky dough.

2. Knead the dough for 5-10 minutes, until it becomes pliable and smooth.

3. Shape the dough into small balls or cylindrical shapes.

4. Boil the fufu in a large pot of water for 10-15 minutes, or until it's cooked through and tender.

OUR FOOD IS READY

Serve the egusi soup over the fufu. Use your hands to tear the fufu into small pieces and dip them into the soup. YES DIG IT
